A few things to check.
Changing allowed apps
Review your allowed apps from Unbound. While locked in, you may need to unlock before editing your selection.
Restrictions aren't behaving as expected
Check iOS Settings → Screen Time → Apps With Screen Time Access. The exact wording or location may vary by iOS version.
Removing Unbound
Unlock before deleting the app so your restrictions can be cleared properly.
